Healthy Snacks for Kids
-1 cup medjool dates (pitted)
-½ cup pecan pieces (preferably soaked overnight) OPTIONAL
-2 tbsp cocoa nibs
-1 tbsp coconut oil
-1-2 tbsp cinnamon OR 3-4 tbsp toasted sesame seeds
Place dates, pecans, cocoa nibs, and coconut oil in your blender/food processor. Blend on high until it makes a thick paste. If using a blender, you may need to stop a couple times to guide the mixture down towards the blade. Form into 1 inch balls and roll in ground cinnamon. They will be sticky at first but the cinnamon will help in molding them. Keep in the freezer. These are best cold and will keep for weeks in the freezer.
