RECIPE #4836 - CHILLED CANTALOUPE RUM SOUP, Monday, June 4, 2012

1/2 stick of butter

2 cantaloupes, peeled and diced

1/4 cup of mango chutney

2 tablespoons unsweetened coconut milk

1 cup orange juice

1/2 cup of cream

1/4 cup rum

 

DIRECTIONS:

Saute melon until slightly soft

Add chutney, coconut milk and orange juice

Simmer until melon is soft but not transparent

Blend in food processor or blender

Stir in cream and rum

Chill and serve cold
