RECIPE # 4209 - CHEESY VEGETABLE CHOWDER - Wednesday, October 8, 2008

2 (14-oz) cans chicken broth

1 c chopped celery

1 c sliced baby carrots

2 c peeled and cubed potatoes

1 c chopped onion

1 c frozen green peas

1 c frozen corn

3 T butter

3 T flour

1 c 1/2 % milk

1 c fat free half & half

8 ounces reduced fat pasteurized cheese food, cubed

1 c shredded sharp cheddar cheese

Place chicken broth in a large, heavy saucepan.  Add celery, carrots, potatoes and onion; bring to a boil.  Cover and reduce heat; simmer for 15-20 minutes or until vegetables are tender.  Remove from heat and stir in peas and corn.  Place butter in a 3-4 cup glass bowl and melt in microwave.  Add flour and stir with a wire whisk until smooth.  Add milk and return to microwave for 1-2 minutes; remove and whisk until smooth.  Add half and half to mixture; return to microwave for an additional 2 minutes.  Remove and whisk until smooth.  Add to vegetable mixture and stir to mix.  Heat soup over low heat until thickened to desired consistency.  Serve in bowls and sprinkle with shredded cheddar cheese on top.  Yield:  6-8 servings. 

*For extra cheese flavor add 1/2 t dry mustard.
