RECIPE # 5193 - VIDALIA ONION POTATO SALAD, Monday, June 23, 2014

3 lb new red potatoes, washed
1 vidalia onion (or your favorite sweet onion), sliced
1 lb bacon
Place washed potatoes in large pot. Cover with cold water, bring to boil, and cook until tender but still firm. Drain in colander.
While potatoes are cooking, fry or bake bacon. Drain bacon reserving a couple tablespoons bacon drippings to sauté onions. Once cooled, crumble bacon. Sauté sliced onions in reserved bacon drippings until transparent.
In a large bowl, place warm potatoes, onion, and crumbled bacon. Coat with dressing below and toss gently. Add more dressing as needed and to taste. I suggest drizzling a little dressing over salad just before serving.
1 1/2 cup vegetable or canola oil
3/4 cup red wine vinegar
1 large vidalia onion, peeled & quartered
2 cloves garlic, peeled
1/3 cup sugar
1 teaspoon dried mustard
1/2 teaspoon celery seed
1 tablespoon kosher salt
1/4 - 1/2 teaspoon pepper
Directions: place all ingredients in food processor and blend thoroughly.
