6 oz of cheddar cheese

6 oz of pepper jack cheese grated

6 oz of Swiss cheese grated

6 oz of mozzarella grated

1/2 cup of mayonnaise

1 teaspoon of finely grated onion

1  4 oz jar of diced pimiento cheese

2 dashes of Tabasco

1 small jalapeño finely diced

Pinch of sugar

½ teaspoon of dijon mustard

In a large bowl mix mayonnaise, onion, mustard, sugar and drained pimiento. Mix in grated cheese. Refrigerate. Makes 6 servings.
