RECIPE # 4942 TWICE BAKED POTATO CASSEROLE Mon. Jan. 7, 2013

5 Cups of Mashed Potatoes (warm)

8 oz pkg Cream Cheese, very soft

12 oz container sour cream

1/4 C Fresh Chives, Chopped (or 2 T dried chives)

1/4 C Butter

1/2 C Shredded Cheddar Cheese

Salt and Pepper to taste

Additional Shredded Cheddar Cheese

Beat cream cheese until smooth. Stir in sour cream and potatoes. Mix together. Add chives, butter, cheddar and salt and pepper. Spoon into greased casserole dish. Bake at 350 until thoroughly heated, approximately 30 min. Just before removing from oven, sprinkle lightly with the additional cheddar and bake until melted.
