RECIPE # 4554 "BOX OF ROCKS" Friday November 5, 2010
TIM PORTER / MT. PLEASANT GRILLE
One bag of fresh mini potatoes (mixed varieties - ruby, purple, gold, banana, sweet, etc.), washed and scrubbed
One sweet onion, chopped
Extra Virgin olive oil
Salt, pepper and any blend of your favorite seasonings to taste (rosemary, parsley, thyme, garlic, etc.)
Dice the potatoes into cubes approx 1/2" in size.
Place the potatoes in a large bowl and sprinkle lightly with olive oil to coat.
Season to taste with salt, pepper, and any combination of spices you enjoy and toss until well mixed.
Spread the potatoes onto a large sheet pan evenly that is lightly coated with non stick cooking spray.
Place into a pre heated 425 degree oven and roast until fork tender, stirring occasionally, approximately 25-35 minutes.
Serve hot with dipping sauces of ketchup, honey mustard, ranch dressing or any other favorite of your choice.
