RECIPE # 4167 APPLE CRANBERRY CHUTNEY July 17, 2008

APPLE CRANBERRY CHUTNEY

16 ounces diced red delicious apples

2 ounces diced red onions

8 ounces craisins (dried cranberries)

1/2 tablespoon fresh chopped ginger

1/4 cup brown sugar

1 cup raspberry puree

2 ounces Red Wine Vinegar

dash cayenne pepper

1 teaspoon salt

couple drops red food coloring(optional)

1 ounce corn starch

2 ounces water

1 ounce fresh parsley(chopped)

*Combine first nine ingredients in a pot and simmer for 3 minutes

*Mix water and corn starch to make a slurry and add it to the simmering chutney slowly, stirring constantly until thickened

*Add parsley and cool
