RECIPE # 4144 - GRILLED CORN - Wednesday, May 21, 2008

ANN COX EASTES -  KROGER

6 ears corn

6 T butter

Salt and Pepper to taste

Pull back husks on corn; remove silks.  Place 1 T butter and salt and pepper on each ear of corn; close husks.  Wrap each ear in heavy duty aluminum foil. Place on grill and cook over medium heat for about 30-45 minutes, or until corn is tender.  Turn occasionally.  

**May also shuck corn and wrap in foil with butter and salt and pepper.

GRILLED CORN IN HUSKS

6 ears corn

1/2 c butter, melted

Salt and pepper to taste

Pull back husks on corn; remove silks.  Replace husks around corn.  Soak in water for 30 minutes to an hour.  Remove corn from water and shake excess water.  Grill corn directly over medium heat for 30-45 minutes, turning occasionally, or until corn is tender.  Serve with melted butter and salt and pepper.   **To get more or a grilled flavor than steamed, remove the husks after about 15-20 minutes of cooking.  Brush corn with melted butter and place directly on the grill.  Roll ears of corn around on the grill to get a slight char appearance and flavor.

DIRECT GRILLED CORN

6 ears corn, husked and silked

6 T butter

Salt and pepper to taste

Brush corn lightly with butter.  Grill the ears of corn uncovered over medium heat for 20-25 minutes, or until corn is tender, turning on all sides to cook evenly.  Brush with more butter periodically, if desired.

Herbs and seasonings may be added to melted butter or to the corn as it is wrapped and cooking.  These might include l tablespoon of minced fresh parsley, cilantro, basil, oregano, rosemary or minced  garlic or  lime juice to taste.
