RECIPE # 5171 - LYNCHBURG LEMONADE CONGEALED SALAD - Fri., May 9, 2014

2 packets (4 ½ tsp) unflavored gelatin

1/3 cup Jack Daniel Tennessee Whiskey

1 ½ cups boiling water

¾ cups sugar

Zest from one fresh lemon

½ cup fresh lemon juice

1 cup orange juice

1 can (15.4 oz) crushed pineapple in juice

2 cups miniature marshmallows

1 cup chopped toasted pecans

Orange slice, for garnish

Sprinkle the gelatin over the Jack Daniel in a medium bowl to soften. Let stand about 5 minutes. Add boiling water, sugar and lemon zest; stir until sugar and gelatin are completely dissolved, about 1 minute.  Add lemon and orange juices. Chill in a 2 qt bowl until slightly thickened.  Stir in  pineapple and its juice , marshmellows, and pecans. Pour into mold if desired. Cover and chill until firm. Garnish with orange slices. Makes 8 servings.
