RECIPE # 5168 GREEK SALAD & ARTICHOKE VINAIGRETTE DRESSING Mon. May 5, 2014

Artichoke Vinaigrette:

3 Tablespoons red wine vinegar

2 Tablespoons mayonnaise

1 Tablespoon Dijon mustard

2 teaspoons salt

½ teaspoon white pepper

1 cup olive oil

1 - 12 oz. can of artichokes, drained

Drain water off artichokes. In a blender, process artichokes, vinegar, mayo, mustard, salt and pepper until smooth. Slowly drizzle the oil. Use in the assembly of Chef's Market's Mason Jar Greek Salad by adding 2 oz. of the vinaigrette to the bottom of a quart mason jar. Then layer grape tomatoes, crisp chopped romaine, kalamata olives, artichokes, feta cheese and cucumbers.
