2 cups finely diced seedless watermelon with rind
½ cup finely diced peeled cucumber
1 jalapeno - seeded and diced
¼ cup diced cilantro
1 Tbls diced fresh basil
1 Tbls fresh mint
¼ cup diced red onion
¼ cup diced sweet red pepper
1 Tbls lime juice
2 Tbls honey
In bowl place all the ingredients except the lime juice and honey. Lightly mix together. Drizzle lime juice and honey. Toss a couple of times and let refrigerate for an hour or more. Serve with pita chips.
Homemade Pita Chips:
Place a cup of vegetable oil in skillet and get hot.
Take flour tortillas and cut into quarters. Place in oil and cook till brown.
