RECIPE # 4166 - FRESH CORN SALAD - Wednesday, July 16, 2008

2 c fresh corn or 1 (16-oz) pkg frozen corn, thawed or 1 (15-oz) can corn, drained

1 c baby lima beans (slightly cooked if frozen) or black beans, rinsed and drained

3/4 c chopped green pepper

1/2 c chopped red onion

1 (4-oz) jar diced pimento

2-3 T fresh snipped basil

Reduced fat ranch or balsamic vinaigrette dressing to taste

Combine corn, beans, pepper, onion, pimento and basil in a large bowl and mix to combine.  Toss with dressing and serve on lettuce leaves.  Yield:  about 3 ½ cups
