MANDARIN ALMOND SALAD with MANGO VINAIGRETTE DRESSING

Ingredients:
Salad ingredients
1 bag Boston or butter lettuce
1 pt. raspberries
1 kiwi, sliced
4 green onions, sliced
1 10-oz. can mandarin oranges
2 T sugar
1 2-oz. bag slivered almonds

Dressing ingredients
1/4 c mango juice or pureed mangos
2-3 T sugar
juice from 1/2 lime
1 T rice wine vinegar
1-2 T canola oil
5 drops Tabasco
1/4-1/2 t crushed red pepper flakes

Directions:
Combine salad greens and fruit in salad bowl.  In a saucepan, heat sugar and almonds over medium heat, stirring constantly until caramelized.  Cool, then sprinkle over salad.

To make the dressing, combine all ingredients.  Best if made several hours ahead of serving time.  Will keep in the refrigerator for up to two weeks.
