TOMATO AND ONION SALAD

Ingredients:
¼ c red wine vinegar
1 ½ T olive oil
1 t Dijon mustard
½ sugar
½ t salt
¼ t pepper
2 Vidalia onions, thinly sliced
2 large tomatoes, cut into large pieces
1/3-1/2 c snipped basil leaves

Directions:
Combine vinegar, oil, mustard, sugar, salt and pepper in a large bowl and beat with a wire whisk to mix.  Add onion slices, tomatoes and basil.  Stir to mix.  Refrigerate for several hours or overnight.  Stir several times. 

Yields 6-8 servings
