RECIPE #5190 - GAZPACHO SHOTS, Wednesday, June 18, 2014

3 cups tomato juice

1/3 cup diced red pepper

1/3 cup diced celery

1/3 cup diced carrots

1/4 cup diced red onion

1 oz Vodka (optional)

1/3 cup sour cream

1 tbsp olive oil

salt & pepper, Tabasco, and Worcestershire to taste

1 diced avocado

1 tbsp lemon juice

DIRECTIONS:

Saute first 4 ingredients in olive oil on medium heat until lightly done.

Add vodka and cook approx. 3-4 minutes.

Add tomato juice, cook until hot.

Add salt, pepper, tobacco, and Worcestershire.

Chill at least an hour in fridge.

Pour into shot glasses, top with sour cream and avocado.
