RECIPE # 5164 BRAISED SHORT RIB TACOS Wed. April 23, 2014

BRITTANY KANE / RIFF'S FINE STREET FOOD 
3 pounds beef short ribs 
kosher salt
fresh ground black pepper 
1 T vegetable oil
½ cup brown sugar 
1 can lemon/lime soda 
3 T minced garlic 
4 T minced ginger
½ cup rice wine vinegar
3/4 cup gochujang (korean red pepper paste)
1 T sesame oil 
3 T soy sauce 
1 asian pear chopped 
Preheat oven to 325 degrees. In a dutch oven over high heat brown short ribs on all sides in vegetable oil.  Sprinkle with salt & pepper. Mix soda and brown sugar, pour in to deglaze pan scrapping all brown bits from bottom. Add all other ingredients and stir together. Cover and place in oven for 3-4 hours until extremely tender. Shred ribs with two forks removing the bones. Serve with tortillas and asian slaw and/or pickles.
