RECIPE # 5139 - CAJUN CARBONARA PASTA - Tuesday, March 4, 2014

4 oz julienne bacon
4 oz julienne red onions
1 T fresh minced garlic
1 oz butter
8 oz heavy cream
1/2 T red pepper flakes
1/2 T ground pepper
1/2 T chicken base
5 oz parmesan cheese
6 oz cooked ziti pasta
1 oz green onions (chopped)
1 Chicken breast
Cajun seasoning

To make sauce, heat skillet to medium high. Saute the julienne bacon for about four minutes until almost cooked. Add the julienne red onions, fresh minced garlic and butter, and sauté for about three minutes until the onions caramelize.  Add heavy cream, red pepper flakes, ground pepper, chicken base and 4 ounces of parmesan cheese; let it reduce for three minutes until you see it thicken. Add ziti pasta and toss.

To cook chicken, heat a separate skillet to medium high. Saute chicken breast and season with Cajun seasoning on both sides. Cook on both sides until the chicken is done.Slice the chicken breast and add to top of pasta and sauce. Top with 1 ounce of parmesan cheese and green onions before serving.
