DEB PAQUETTE / ETCH RESTAURANT FOR TASTE OF THE NFL

Sausages of choice, grilled 

 


Muhamarra sauce:
1 1/2 cups pomegranate molasses
1/2 cup walnut oil
1/2 cup toasted walnuts
1 teaspoon sriracha
1 tablespoon toasted cumin seeds
3 roasted red peppers, seeded
2 lemons, zest and juice
1//2 teaspoon salt
 
Plum sauce:
2 cups plum jam (may substitute strawberry)
2 teaspoons sriracha
 
Lime crema:
2 cups sour cream
1-2 limes, zest and juice
 
Butternut peanut relish:
2 pounds butternut squash, roasted, peeled and diced ½ in. cubes
1 cup roasted peanuts, chopped
1 teaspoon smoked sea salt
1/4 cup cilantro, chopped
4 green onions, minced
1/4 cup walnut oil
1 teaspoon coriander, toasted and ground
1/2 teaspoon black pepper
1 teaspoon honey
 
In a blender, add all ingredients for Muhamarra sauce and blend for 1 minute until smooth. Strain if needed. Cover and refrigerate.
 
In a mixing bowl, stir together jam and sriracha. Cover and refrigerate.
 
In a mixing bowl, stir together sour cream and lime juice and zest. Cover and refrigerate.

In a mixing bowl, mix together roasted squash, salt, cilantro, onions, oil, coriander, pepper and honey. Toss in peanuts.
 
To serve, plate grilled sausages with choice of sauces and greens.
