RECIPE #5117 - PIGGY MAC, Tuesday, January 21, 2014

KEITH GRAY / PUCKETT'S 

1 – Iron Skillet

6 oz. Pulled Pork BBQ

1 Tbl Spicy BBQ Sauce (drizzle across BBQ)

4 oz Portioned Cooked Macaroni Noodles

4 oz Cheese Sauce (see recipe)

1/8 Cup Shredded Gouda Cheese

1 Tbl Bread Crumb Topping (Breadcrumbs,parsley,bacon,grated parm)

Garnish- Green onion, Red Pepper Strip

Served with Baked Beans

*Place Pulled Pork in bottom of skillet. In a saute pan, place the prepared cheese sauce and allow to warm. Once warmed, add the portioned noodles and saute. Place the Mac and Cheese on top of the Pulled Pork. Add the Gouda Cheese and Bread Crumb topping. Finish in the oven til browned. Garnish.

Cheese Sauce

2 Tbl Butter

1/2 Cup Milk

1 Cup Shredded American Cheese

1 tsp Salt

1 tsp White Pepper

1/2 tsp Paprika

1/4 tsp Mustard Powder

1/4 tsp Granulated Garlic

*In a Sauce Pan melt butter and stir in milk. Once milk is warm whisk in you cheese. Once cheese smooths add the dry seasonings. Continue on low heat til all seasonings are dissolved and cheese is smooth.
