RECIPE # 4992 SWEET POTATO BLACK BEAN TACOS Tue. April 16, 2013

Drizzle of extra virgin olive oil ( or vegetable oil )

1 onion, chopped

1 sweet potato, diced (peel left on)

1 can black beans, drained

1/2 cup shredded or chopped carrots

1 tablespoon each chili powder, cumin and ground coriander

4 whole wheat tortillas

Optional Toppings: avocado slices, plain greek yogurt or sour cream, chopped cilantro, chopped spinach, squeeze of lime

Directions: Heat oil in a medium skillet over medium high heat. Add onion, sweet potato and carrots and saute, stirring several times, until sweet potato begins to soften and is browned in parts, about 10 minutes. Cover and cook for an additional 5-6 minutes or until sweet potato is cooked through. Move sweet potato/onion mixture to side and add spices. Saute directly on skillet for a few minutes to toast. Then add black beans (do not rinse) and stir to combine. Simmer 5-6 minutes until mixture thickens slightly. Serve in tortillas with optional toppings if desired.
