RECIPE # 4983 SALMON WITH PINK PEPPERCORN SAUCE Mon. March 25, 2013

AMANDA SAAD / PORTA VIA ITALIAN KITCHEN

Salmon Pepe Rosa ( which means salmon with pink peppercorn sauce )

Ingredients:

Four 6 oz pieces of fresh salmon

¼ cup pink peppercorns

½ cup plus 2 tbsp brandy

4 tbs butter

1 tbs brown mustard

2 cups heavy cream

salt to taste

Preparation: Place pink peppercorns in small bowl, and pour 2 tbs of brandy over. Allow to set at least one hour. Season salmon with salt & pepper. Sear in pan over medium high heat until salmon is browned & cooked to desired internal temperature. Remove from heat. In a heavy saucepan, melt the butter over medium heat. Stir in brown mustard until fully incorporated. Turn heat to low and slowly add brandy. Turn the heat back up to flambé the brandy. Add cream and peppercorns, stirring completely. Simmer over medium low heat under mixture reduces, about 5-10 minutes. Pour sauce over salmon, and serve immediately with vegetables.  Serves four.
