RECIPE # 4438 PAPPARDELLE FRESCA AL SALMONE Thursday February 18, 2010

Pappardelle Fresca al Salmone (Fresh Peppered Pasta with Porta Via's Pink Salmon Sauce)

Pan fry one pound good quality fresh Salmon for about 3 minutes on each side then remove skin and cut into 1/2 inch pieces

Cook wide flat pasta (Pappardelle) "Al Dente"

2 Tsp Olive Oil to sauté

1/2 cup chopped onions

1/4 cup of shallots

1/2 cup coarsely chopped chanterelles or other mushrooms

1/2 cup crushed San Marzano Tomatoes

1/2 cup of heavy cream

2 Tsp butter

1/2 cup chopped Italian parsley (use half for sauté & half for garnish)

Rosemary sprig (sauté with other ingredients then use as garnish on top of finished dish)

1.5 oz of good Brandy

Salt & Pepper to taste
