RECIPE # 4893 COCA COLA BUNDT CAKE Tue. Sept 18, 2012

1 1/2 cups butter softened

2 1/2 cups sugar

3     large eggs

1 1/2 teaspoon vanilla extract

1     cup Coca-Cola beverage

3/4   cup buttermilk

1/2   cup bourbon

3      cups all-purpose flour

1/2  cup unsweetened cocoa

1 1/2 teaspoons baking soda

1/2   teaspoon salt 

Assemble ingredients and utensils. Preheat oven to 350 degrees.In bowl of large mixer beat butter at medium speed until creamy. Gradually add sugar, beat until blended. Add eggs and vanilla, beat at low speed until blended. In a small bowl combine buttermilk and bourbon. Combine flour and next 3 ingredients in another bowl. Add flour mixture to buttermixture alternately with cola mixture beginning and ending with flour mixture. Scrape bowl on sides as you are mixing. Pour batter into a 15 cup /Bundt pan and bade 45 to 50 minutes or until a wooden pic inserted in cake comes out clean. Cool for about 30 minutes and drizzle Bourbon and Cola glaze over top. 

Cola and Bourbon Glaze 

1/4 cup butter

3    tablespoons cocoa -cola beverage

2 1/2 tablespoons unsweetened cocoa

1    tablespoon Bourbon

2 cups plus 2 tablespoons powdered sugar 

In a 2 quart saucepan, cook first 3 ingredients over medium heat, stirring constantly until butter melts. Remove from heat and stir in Bourbon. Beat in powdered sugar at medium speed with an electric mixer until smooth. Drizzle over cake. Delicious. Yield: 15 cake slices.
