RECIPE # 4884 COCONUT MERINGUE PIE Tue. Sept 4, 2012

AREEDA SCHNEIDER-STAMPLEY / SOUTHERN STYLE COCONUT MERINGUE PIE

1/4 cup cornstarch

3/4 cup sugar

2 cups milk

3 egg yolks, slightly beaten

1 cup flaked coconut

1 1/2 teaspoons pure vanilla extract

Pie Crust, baked

Combine cornstarch and sugar in heavy saucepan. Gradually add milk; blend well. Cook over medium heat, stirring constantly until slightly thickened. Add small amount of mixture into slightly beaten egg yolks, then add egg yolks to mixture. Continue cooking until thick. Remove from heat and add vanilla and coconut. Blend well; cool slightly before pouring into pie crust.

Meringue

3 egg whites

1/2 teaspoon vanilla extract

1/4 teaspoon cream of tartar

6 tablespoons sugar

Beat egg whites until slightly puffy; add remaining ingredients and beat on high until peaks form. Spread over filling. Sprinkle with coconut. Bake in preheated 350 degree oven until golden brown. www.areedasoutherncooking.com
