RECIPE # 4824 GOO GOO QUESADILLA Thursday May 10, 2012

Eight 10" tortillas

10 tbs butter, divided

4 Goo Goo Clusters, chopped

1 lb bacon, finely diced

1 jalapeno, minced

1 teaspoon or other hot sauce

3 Granny Smith apples, diced

1/3 c light brown sugar

½ teaspoon cinnamon

Pinch salt and pepper

½ cup bourbon, divided

1 cup sugar

2 tablespoons corn syrup

½ heavy cream

1 teaspoon salt

PREPARATION:

Cook bacon until crisp. Pour off extra grease, then add the jalapeno and hot sauce to the bacon. Stir and remove from heat.

In a separate pan, place 2 tablespoons butter and melt over medium heat. Add apples, brown sugar, cinnamon and a pinch of salt and pepper. Cook over medium low heat until apples are soft and liquid is syrupy. Add ¼ cup of bourbon and remove from heat.

For the bourbon caramel, place sugar and a bit of water in a saucepan, cooking over medium heat until sugar browns. Stir once and then just swirl the pan. Slowly add 6 tablespoons butter and the cream, then stir to incorporate. Add salt and cook on low (do not stir) until caramel reaches desired consistency. Remove from heat, and once cooled, add bourbon.

In a large pan, place a tablespoon of butter over medium high heat. Place Goo Goo Clusters and bacon mixture between two tortillas and sear on each side until tortillas are brown and center is gooey. Remove from heat, slice, and top with apple relish, bourbon caramel sauce, and ice cream or whipped cream if desired. Repeat three times with remaining ingredients. Serve immediately. ENJOY!
