RECIPE # 4567 - CHRISTMAS PECAN PRALINES, Monday, December 6, 2010

1-1/2 cups heavy cream

3 cups sugar

3 cups pecan pieces

3/4 cup sugar (keep separate from other sugar)

juice of half a lemon

1-1/2 sticks of butter

DIRECTIONS:  Combine first 3 ingredients, mix and bring to a boil.  Once they are boiling, brown additional sugar in a pan until deep golden brown.  Pour sugar into nut mixture,  add lemon and butter and cook until 235-245 degrees.  This is called the soft ball stage because if you drop a bit of the mixture into cold water it will form a soft, malleable ball.  Let mixture cool slightly and mix well to incorporate air. Spoon onto a cool surface and let harden.  Enjoy!
