RECIPE # 4552 - PRALINE POUND CAKE WITH SUGARED PECANS - Wednesday, November 3, 2010

1 c butter, softened

1 (8-oz) pkg neufchatel cheese

2 c dark brown sugar (packed)

4 eggs

2 ½ c self-rising flour

1 (8-oz) container reduced fat sour cream

1 c chopped, toasted pecans

2 t vanilla

 Place butter and neufchatel cheese in a large bowl and beat with a mixer until creamy.  Gradually add brown sugar, beating until well blended.  Add eggs, 1 at a time, beating until blended.  Add half of flour mixture to batter; mix to blend.  Add sour cream; beat to blend.  Add remaining flour mixture and beat until ingredients are thoroughly mixed.  Stir in nuts and vanilla.  Carefully pour batter into a greased and floured 12-cup bundt pan (batter will be very thick). Bake at 325F on a rack in the center of the oven for 60-65 minutes or until cake tests done.  Cool cake in pan for 15-20 minutes.  Remove from pan and cool completely.  Yield:  10-12 servings.

Caramel Icing

1 c light brown sugar (packed)

1/3 c butter

1/3 c buttermilk

3 c powdered sugar, sifted

1 t vanilla

Place brown sugar, butter and milk in a saucepan and cook over medium heat just to a boil, stirring continually.  Remove from heat and add sugar and vanilla; beat until smooth.  Continue stirring until icing thickens to desired consistency.  Spread over Praline Cake, working quickly. 

Sugared Pecans

1 egg white

4 c pecan halves

½ c sugar

½ c light brown sugar (packed)

Beat egg whites until foamy; add pecans and stir to evenly coat.  Combine sugar and brown sugar and sprinkle over pecans.  Spread pecans evenly on a non-stick jelly roll pan (10X15-inches) which has been coated with vegetable spray.  Bake at 350F for 18-20 minutes or until pecans are toasted and dry, stirring once after half of cooking time.  Remove from oven and let cool completely.  Store glazed pecans in an airtight container at room temperature or in the freezer.

 Toasted Pecans

Place pecan halves or pieces in a single layer on a baking sheet.  Bake at 350F for 10 minutes.  Remove from oven and cool.
