RECIPE # 4510 - ORANGE JUICE CAKE - Tuesday, August 3, 2010

CAKE INGREDIENTS:

1 (3.5-oz) pkg instant vanilla pudding mix

1 (18.25-oz) pkg yellow cake mix

4 eggs

1 (15-oz) can mandarin orange segments, drained and chopped

1 c fresh squeezed orange juice

1/2 c vegetable oil

Combine in a large bowl the pudding mix, cake mix, eggs, orange segments, orange juice and oil; mix with mixer for 2-3 minutes or until totally combined.  Pour batter into greased and floured bundt pan.  Bake in a preheated 350F oven for 45-50 minutes or until cake tests done. 

GLAZE INGREDIENTS:

1 c fresh squeezed orange juice

1 1/2 c powdered sugar

1/4 c butter

Combine the orange juice, powdered sugar and butter in a glass bowl; stir to mix.  Place in the microwave and heat mixture on high for 3 minutes.  While still warm, poke holes in the top and sides of the cake and gently pour orange juice mixture over cake.  Yield:  10-12 servings.
