RECIPE # 4371 - JACK'S BIRTHDAY CAKE - Friday, September 18, 2009

2 1/4 c all-purpose flour

2 1/4 t baking powder

1/2 t salt

1 c (2 sticks) butter

2 c firmly packed brown sugar

4 eggs

1/2 c whiskey

1 c chopped pecans

1 pkg (6 oz) semi-sweet chocolate chips

 Jack Daniel's Chocolate Frosting (recipe follows)

Heat oven to 325 degrees.  Grease a 9x 13 baking pan.  Combine the flour, baking powder, and salt in a medium mixing bowl.  Set aside.  Melt butter in a large saucepan over low heat.  Remove from heat.  Stir in the brown sugar, eggs, flour mixture, and  whiskey,  stirring well after each addition.  Pour batter into the greased pan.  Sprinkle evenly with pecans and chocolate chips.  Bake 45 to 50 minutes or until center of the cake is firm and edges begin to pull away from the sides of the pan.  Cool on a wire rack, then spread with Jack Daniel's Chocolate Frosting.

Jack Daniel's Chocolate Frosting

1/2 c (1 stick) butter or margarine
2/3 c Cocoa Powder
3 c powdered sugar
1/3 c milk
2-3 T whiskey

1 t vanilla extract

Frosting Instructions:

Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Stir in whiskey and vanilla.
