RECIPE # 4242 - EASY MADE JAM CAKE - Friday, December 19, 2008

3 eggs

1 1/2 c  brown sugar

1 c vegetable oil

1 c seedless blackberry jam

1/2c buttermilk

2 1/2 c self-rising flour

1 t cinnamon

1/2 t cloves

1/2 t nutmeg

1 c chopped pecans, black walnuts or walnuts

Brown Sugar Whiskey Icing (recipe follows)

Heat oven to 350 degrees.  Beat the eggs in a large mixing bowl. Stir in the brown sugar, vegetable oil, jam and buttermilk.  Blend well.  Stir in the flour, cinnamon, cloves and nutmeg, beating until smooth.  Fold in the nuts.  Pour into 9" X 13" greased baking pan.  Bake 30 to 35 minutes or until the sides begin to pull away from the pan and the top is firm and lightly browned.  Let cool and frost with Brown Sugar Whiskey Icing.

Brown Sugar Whiskey Icing

1 stick butter

1/2  c brown sugar

3 T milk

2 T whiskey

1 teaspoon vanilla

2 c powdered sugar

Melt butter in a saucepan over medium heat.  Stir in the brown sugar, milk and whiskey and bring to a boil.  Cook and stir the mixture until thickened and bubbly, about 2 minutes.  Remove the pan from the heat.  Stir in vanilla and powdered sugar.  Beat with a wooden spoon until smooth and spreadable.  Spread over the cooled Jam Cake.
