RECIPE # 5195 TOMATO BASIL SQUARES Wed. June 25, 2014

1 pizza crust

2 cups shredded mozzarella cheese - divided

1/4 cup grated fresh Parmesan cheese

2/3 cup mayonnaise

2 tablespoons snipped fresh basil leaves

1 garlic clove, pressed

4 plum tomatoes, sliced

1 tsp. Italian seasoning

Preheat oven to 375 deg. Roll pizza crust to within 1 inch of edge of rectangle pizza stone or jelly roll pan. Sprinkle crustwith 1 cup of the mozzarella cheese; set aside. Slice tomatoes and arrange evenly over crust. Mix well in small bowl Parmesan cheese, mayonnaise, basil, Italian seasoning and pressed garlic. Scoop cheese mixture evenly over tomatoes; spread evenly. Bake 15-20 minutes or until crust is golden brown. Cut into squares; serve warm. Yield: 20 servings

HOMEMADE PIZZA CRUST; OPTIONAL

5 cups sifted plain or bread flour

2 tablespoons yeast (2 pkg. yeast)

1 tablespoon salt

2 teaspoons sugar

Mix together above ingredients in large bowl.

Add:

1/2 cup oil

1 1/2 cups warm water

Knead dough until holds shape with flour. Coat dough with 2-3 tablespoons of oil and place in bowl cover with towel and let rise for 10 to 20 minutes. Divide into 2 balls of dough.
