RECIPE # 5180 SPICED CHERRY TOMATO JAM Monday June 2, 2014

2 pounds cherry tomatoes

3 tablespoons olive oil

2/3 cup red wine vinegar

1 shallot, minced

4 cloves garlic, minced

3/4 cups sugar

zest of 1 lemon

1 tablespoon salt

Saute the garlic and shallots in the oil for 2 minutes on medium heat. Add the tomatoes and stir to coat. Add the vinegar and sugar. Simmer everything on low until tomatoes are broken apart and liquid is thickened. Season with the salt, pepper, and lemon zest. Let cool to room temp to serve.
