RECIPE # 5159 - CRISPY PECAN CHEESE WAFERS - Friday, April 11,2014

2 cups grated sharp Cheddar cheese
1 cup (2 sticks) salted butter, softened
2 cups all purpose flour
2 cups crispy rice cereal
cayenne pepper, to taste
About 36 pecan halves
Heat oven to 375 degrees. Cream the cheese and butter in a large mixing bowl using an electric mixer. Slowly blend in the flour. Stir in the cereal and cayenne pepper. Drop by teaspoonfuls onto a cookie sheet and flatten out with the back of a spoon or fork to make round wafers. Top each wafer with a pecan half. Bake for 10 minutes or until just lightly browned. Cool on rack. Store in an airtight container.
Makes about 36 wafers.
