RECIPE # 5146 REUBEN EGG ROLLS Thu. March 13, 2014

2 Cups Diced Corned Beef

2 Cups Sauerkraut

4 Tablespoons 1,000 Island Dressing

1 ½ Cups Shredded Swiss Cheese

1 Pkg Egg Roll Wraps (18) 

2 Egg Yolks 

1 - 3 cups Oil (depending on skillet size) 

Mix the first 4 ingredients in bowl, use 2 tablespoons filling for each Egg Roll. Fold bottom cover over filling then fold in side corners, brush top corner with egg yolk and roll up wrap tightly to enclose filling. In a large skillet, heat oil to 350 degrees and place rolls in the skillet ( a few at a time) turning occasionally until golden brown approximately 2 - 3 minutes. If you prefer to bake the rolls, place them on a baking sheet coated with a non-stick spray and lightly coat the rolls with the spray as well, bake until golden brown approximately 10 - 12 minutes. Serve with a side of 1,000 Island Dressing for dipping. ENJOY!
