RECIPE # 5123 - SUGARED BACON & BUFFALO CHICKEN SLIDERS - Jan. 31, 2014

SUGARED BACON

8 thick or thin slices bacon
1/2 c light brown sugar
1 T Dijon mustard

Line a jellyroll pan with aluminum foil.  Place a rack in the pan.  Place bacon slices on the rack.  In a small bowl mix brown sugar and mustard.  Press sugar mixture on each slice of bacon.  Bake in a 350-375 degree  oven for 30-40 minutes. (Use an oven thermometer - if your oven is too hot, the bacon will burn!) 

Yield:  8 slices bacon


BUFFALO CHICKEN SLIDERS

2 c chopped or shredded, cooked chicken
1/2  c Buffalo sauce
1/4 c Ranch dressing
1/4 c Blue cheese dressing
1 c shredded mozzarella cheese
1(12) pkg slider or dinner rolls

Combine chicken, Buffalo sauce, Ranch dressing and Blue cheese dressing in a bowl; mix to combine.  Place chicken mixture on bottom half of rolls.  Top with shredded mozzarella cheese.  Place roll tops on sliders.  Bake chicken sliders in a preheated 350F oven for 20-30 minutes or until hot.  Yield:  12 servings
