2 sheets frozen puff pastry (17.3-oz pkg), thawed
1 c chopped or shredded cooked ham
¾ c mushroom slices
2 c shredded Swiss cheese
½ c reduced fat sour cream
½ c chopped chives
½ t salt
¼ t pepper
Unfold pastry sheets and place on 2 baking sheets, sprayed with vegetable spray. Turn edges up around the rim, about ½-3/4-inch. Sprinkle pastry with ham, mushrooms and Swiss cheese. In a small bowl beat together eggs, sour cream, chives, salt and pepper. Gently pour half of egg mixture over top of filling on each pastry and spread to make sure liquid is absorbed in filling.Bake in 400F oven for 25 minutes or until flan is puffed and golden on top and filling is set. Cut each flan into 2 pieces cutting on the diagonal and then cutting again on the diagonal. Each flan may also be cut into small squares for appetizer servings. To garnish, sprinkle with additional chopped chives or place a few whole chives on top. Yield: 4 servings, 8 appetizer servings. **May freeze pastry with fillings for 15-20 minutes, before egg mixture is added to insure rim stays firm.
