RECIPE # 4528 - WEEKEND BREAKFAST PIE - Friday, September 10, 2010

1 1/2 c cracker crumbs (about 1 sleeve)
1 stick melted butter
6 slices bacon
1 c chopped onion
1 c sour cream
1/2 t salt
2 c shredded Swiss or Monterey Jack cheese
1/2 c shredded sharp cheddar cheese
Heat oven to 375 degrees. Combine cracker crumbs and butter in small bowl. Press the crumbs into a 9 inch pie plate. Cook bacon in skillet until crisp. Remove bacon and crumble into a mixing bowl. Cook onion in the skillet with one tablespoon bacon drippings over medium heat until tender. Add onions to the bacon. Stir in sour cream, eggs and salt and blend well. Stir in Swiss or Monterey Jack cheese and pour into the pie plate. Sprinkle with cheddar cheese and bake 25 to 30 minutes or until set.
Makes 6 to 8 servings.
