RECIPE #4111 - HOT WATER CORN BREAD - Friday, February 22, 2008

2 c. corn meal, self-rising

2 T all-purpose flour

1 egg

1 T sugar, optional

1-1/2 c hot water

vegetable oil

Combine corn meal, flour, egg, sugar and hot water in a large bowl. Heat oil in skillet to 375 degrees. Place about 1 heaping tablespoon of cornmeal mixture for each bread patty in skillet. Spread to form flat circles. Fry over medium heat until light brown on both sides, about 3 to 5 minutes. Cool patties on paper towels.

Yield: 8 to 10 bread patties.

NOTE: Make sure the water is hot and not lukewarm - it makes better bread.
