RECIPE # 4269 - MISS MARY'S SWEET POTATO MUFFINS - Friday, February 13, 2009

1 1/2 c self-rising flour

3/4 c plus 2 T sugar, divided

1  t  cinnamon

1/4 t nutmeg

1/4 t ginger

1/3 c vegetable oil

2  eggs, beaten

2  T whiskey

1 c mashed sweet potato or pumpkin puree

1/2 c toasted chopped pecans

Preheat oven to 375 degrees.  Grease 12 muffin cups or 24 mini muffin cups.  Combine flour, 3/4 cup sugar and spices in a large mixing bowl and blend well.  Stir in oil, eggs, whiskey and sweet potatoes until well blended.  Spoon into muffin cups.  Sprinkle with pecans and remaining sugar.  Bake 15 to 20 minutes for regular size muffins and 10 to 13 minutes for mini muffins.
