Santa's Favorite Leftover Sandwich

Prime Rib “Cheesesteak” Sandwiches 
(Yield: 4 sandwiches)

1# prime rib (shaved)
4 ea. hoagie rolls
1 ea. yellow onion
4 Tbsp. dijon mustard
8 slices provolone cheese
 ¼ c. canola oil
¼ c. water or au jus


Heat large sauté pan on high. Add oil, when it starts to smoke, add prime rib, salt and pepper to taste. Let the meat brown well, (caramelize) approximately 3 minutes. Add sliced onions, continue to brown until onions are soft and meat is almost crispy. Add water or au jus to deglaze pan. Remove from heat. Apply  mustard to bread. Next, add meat mixture onto hoagie roll and place 2 slices each of provolone cheese. Heat sandwich in microwave until cheese is melted. (approximately 20 seconds)
