Thrifty Thursday: Using up those leftover, boiled Easter eggs

Creamed Eggs & Hash Browns ($6.45 total)
1 dozen eggs = $1.00
1 pound sausage = $2.50
5 cups of milk = $.95 ($3.00 gallon of milk /16 cups in a gallon = $.19 a cup)
Hash browns = $2.00
12 hard boiled eggs, peeled & chopped
1 pound of breakfast sausage
¼ cup of flour
4-5 cups milk
½ teaspoon salt
¼ teaspoon black pepper
In a large skillet over medium high heat cook the sausage until fully cooked. Do Not Drain.
Add the flour, salt & pepper to the skillet and mix until the flour has absorbed the grease. (this is the best trick to always have smooth creamy gravy!!)
Still on medium high heat, Add the chopped eggs and pour in the milk. Stirring constantly until the gravy is thick and bubbling.
Turn to low and let simmer for 15 minutes.
Serving over warm buttered biscuits, Toast or hash browns!
And for some fun with marshmallow peeps, try dipping them in chocolate and adding sprinkles (gourmet peeps), or use them in s'mores or hot chocolate. Then there's always the 'peep fights' in the microwave.
