Chef Lou Aaron shares wife's BBQ chicken recipe

Chef Lou Aaron from Westside Drive-In joins us tonight, live on Fox9 On Your Side, with some great summer recipes for barbecue chicken and a broccoli salad.  Here are the recipes:

CHEF LOU’S WIFE’S BBQ CHICKEN

BARBEQUE SMOKE MARINADE

2 cups French Dressing

1/3 cup Liquid Smoke

1 tablespoon Worcestershire Sauce

1 tablespoon Lemon Pepper

1/3 cup Honey

Mix all ingredients well

4 pound Raw Cut-Up Fryer Chicken

METHOD:

Marinate chicken for at least 5 hours, or overnight. Heat gas or charcoal broiler. Blister each side of chicken-this Process takes 7-9 minutes each side. At this point, you can turn your grill down and finish cooking Chicken. This takes about 20-25 minutes depending on what piece of Chicken(breasts take longer than wings!)

You can place chicken on a bake pan(cookie sheet) and baste with Leftover marinade. Place in a preheated 375 degree oven and cook for About 35-40 minutes.

*discard marinade after finishing.

  

CHEF LOU'S RANCH & BROCCOLI SALAD

INGREDIENTS FOR RANCH DRESSING

1 Cup Buttermilk

1-1/2 Cups Mayonnaise

1-2 teaspoon Salt

1 teaspoon Ground Black Pepper

1 teaspoon Onion Powder

1-1/2 teaspoon Granulated Garlic

1 teaspoon Celery Seed

1/2 teaspoon Ground Ginger

1⁄2 teaspoon Dill Weed

METHOD:

Mix all ingredients well. Refrigerate until ready to use. Makes 2-3/4 cups. **Please note that you will only be using 1 to 1-1/2 cups of the dressing for the salad. You will have some dressing left over**

FOR SALAD

3 cups Broccoli Florets, blanched for about 1 minute in boiling water

1 cup cooked Bacon Bits

1 cup Sliced Onions

1⁄2 cup Red Bell Peppers, diced

1⁄2 cup Green Bell peppers, diced

1 to 1-1/2 cups Ranch Dressing

METHOD:

Place all ingredients except 1⁄2 of the bacon bits in large bowl. Pour ranch dressing over and mix well until everything is coated. Sprinkle with remaining bacon bits. Refrigerate until ready to use.
