Coconut and Snapper Ceviche
1 pound of Florida Snapper (cut in small pieces)
1 Red Pepper
1 Roasted Pablano
1 bunch Cilantro
1/2 Cucumber (Peeled and Seeded)
2 Fresh Lime Juice
1 Cup fresh Coconut Water
Salt and Pepper
Dice the Red Pepper, Shallot, Pablano, and Cilantro.
Combine all ingredients and let the ceviche sit for 30 min, covered in you refrigerator.
